Ingredients
- 8 slices of smoked bacon
- 4 small rounds of goat cheese
- 2 cups arugula (rocket) leaves
- 1 tomato, diced
- 1 tbsp olive oil
- 1 tsp honey
- Freshly ground black pepper
Instructions
- Preheat oven to 200°C (400°F).
- Wrap each goat cheese round with bacon slices.
- Place on a baking sheet and bake for 15–20 minutes, until the bacon is crisp.
- In a bowl, mix arugula, tomato, olive oil, and honey.
- Place the warm bacon-wrapped cheese over the salad.
