Ingredients

  • 8 slices of smoked bacon
  • 4 small rounds of goat cheese
  • 2 cups arugula (rocket) leaves
  • 1 tomato, diced
  • 1 tbsp olive oil
  • 1 tsp honey
  • Freshly ground black pepper

Instructions

  • Preheat oven to 200°C (400°F).
  • Wrap each goat cheese round with bacon slices.
  • Place on a baking sheet and bake for 15–20 minutes, until the bacon is crisp.
  • In a bowl, mix arugula, tomato, olive oil, and honey.
  • Place the warm bacon-wrapped cheese over the salad.
  • Drizzle with a little honey and season with black pepper.
